Elegant Haute Cuisine Bush Dinner Menus:

The table d'hote five course dinner menu changes daily. Periodically when available from Mombasa we offer lobsters, tiger prawns, shrimps or crabs. Alternatively we try to offer a choice of bush or beach selections by securing a variety of meat dishes as well as a supply of varied fish dinners. Salad selections and other vegetarian dishes are also prepared. Below are a few samples of our many varied haute cuisine dinner menu selections that are offered periodically in our various dinner settings:

  • Cream of celery and Roquefort blue cheese soup or French baked mushroom souffle or Japanese seared Sirloin tataki with mustard mushroom salad and ginger soy dressing
  • Greek salad with Feta cheese or Toledo balsamic spinach salad
  • Roast lamb with Dijon mustard crust, Provencale vegetables and mint sauce or fried red snapper with vegetable potpouri in a garlic butter sauce
  • Vegetarian dishes - Royal Mara home made Tagliatelle with tomato sauce or Fettuccine Alfredo with broccoli au gratin
  • Orange mousse, Greek Baklava pastry, American carrot cake or coconut flavoured banana Mille Feuille pastry

  • Tomato soup with croutons or smoked salmon with cream cheese on melba toast with onions, chives and capers or griddled Japanese Gyoza prawn dumplings in sesame soy dipping sauce
  • Chicken flavoured Caesar salad or mixed salad Nicoise
  • Baked turkey Fricassee or mixed seafood in Doria sauce with baked potatoes and vegetables in season
  • Vegetarian dishes - Royal Mara vegetable lasagna or Chinese sauteed mixed vegetables in a spicy sweet Thai soy sauce with bamboo shoots
  • Flambe French crepe suzette, Greek Galaktoboureko honey pastry or New York style cheese cake with strawberry or Swiss chocolate topping

  • Cold Spanish Gazpacho soup or baked French mushroom quiche or Japanese Yakitori soy glazed chicken
  • Manila spinach and chicken salad with honey mustard dressing or Royal Mara chef's salad with choice of French or Blue Cheese dressings
  • American style prime roast beef au jus with baked potato and cauliflower au gratin or spiced Mombasa prawns with croquette potatoes
  • Vegetarian dishes - individual Royal Mara tomato and vegetable pizza or Mediterranean pasta plate with onions, sun-dried tomatoes, Kalamata olives, bell peppers and mushrooms in a sherry vinaigrette
  • Creme Caramel, crusted Creme Brule or hot New York apple pie a la mode

  • French onion soup gratinee topped with melted Gruyere cheese or ginger spiced shrimps with traditional San Francisco horseradish cocktail sauce
  • Cold tuna and asparagus salad or mixed Greek salad with feta cheese
  • Tournedo of Chateaubriand with mustard mushroom sauce, bouquet of vegetables, sliced carrots a la Vichy and baked potato or salmon en croute with Hollandaise sauce and vegetables in season
  • Vegetarian dishes - baked lasagna and eggplant Parmigiana or spinach whole wheat Florentine linguine with roasted mushrooms Putanesca
  • Tahitian pineapple and pears pudding with vanilla sauce, American banana split with choice of ice cream, whipped cream, toppings and nuts or mixed African fruit plate with yogurt and nuts

  • Minestrone soup or caviar with cream cheese on melba toast
  • Spinach and rare beef vinaigrette salad or cauliflower with cheese souffle
  • Grilled American style beef steak (T-bone, Sirloin, Filet Mignon etc.) with BBQ mushroom sauce, choice of potatoes and vegetables or fried Nile Tilapia fish fillet in white wine lemon sauce with mixed vegetables and capers
  • Vegetarian dishes - spinach stuffed cheese ravioli or fried Japanese tofu with mustard, cabbage, shredded carrots, julienne tomatoes and shiitake mushrooms in a sesame soy sauce
  • Bittersweet chocolate mousse cake, caramel turtle pie with ice cream, chewy caramel and praline pecans or Greek baklava

All dinners are preceded with an assortment of Italian antipasto or periodically when available fresh Japanese sushi or sashimi. Kenyan tea and American style brewed coffee are offered on all meals as well as an assortment of other coffees (Cappuccino, Espresso, Greek etc.) as well as a choice of soft drinks or house wines. After dinner a choice of liqueurs or cognacs are also available.
